I have a useful cooking tip for us. If you want to cook your vegetables quicker, adding salt to the pot elevates the boiling point of water and helps restrict vitamin loss from the vegetables. Furthermore, salt helps decrease the acidic ions in water and allows the vegetables to remain greener because chlorophyll is less affected. Once the water is boiling, toss in the vegetables in batches and boil them until they’re cooked. Be sure to flip the vegetables over to cook them evenly. After they’re done cooking, remove them immediately from the heat and set them in a bowl of ice water for several minutes. This heat shock not only keeps the vegetables from overcooking, but also from discoloring. Try it out at home!
